‘René Goutorbe’s daughter Elisabeth Goutorbe makes organically oriented Pinot-driven champagne. The local beauty Elisabeth grew up in Aÿ and on her birthday in 2005 she met her great love Jean-Marie from Louvois and three years later in 2008 they started their own champagne house according to modern sustainability and converting principles. Today, 6.5 hectares are available in Aÿ, Louvois, Mutigny, Mareuil and Tauxières and champagnes are made with a focus on purity. Impressive Aÿdominated Extra Brut with 10 years on the yeast.’

‘Marc Hébrart and his son Jean-Paul are the most famous growers in the village. The domaine was founded in 1964. Marc Hébrart owns 13.80 hectares Besides Pinot grapes from Mareuil, Aÿ, Avenay, Mutigny and Bisseuil they have access to Chardonnay from Chouilly and Oiry. Their vines ar twenty-eight years old on average. It is always a joy to visit Jean-Paul at his lovely 14 hectares of property by the Marne River.Hebrart uses mainly steel tanks, with each parcel vinified separately. A small proportion of fruit from the old vine parcels is fermented in cask. Malolactic is routinely done, and the wines are disgorged six months before shipping. He belongs to the new type of well-educated, quality-concerned vintners – a grower to keep an eye on. Jean-Paul has found love in Cramant, and the object of his happiness is Isabelle Diebolt. What a cuvée! The Special Club is very reliable and it has a delightful aroma of the finest apple sauce. My new favorite is the leix-dit Noces de Crai.’
