Giorgio Scavarelli

Scavarelli is the head sommelier at The Colony Grill Room, the restaurant at The Beaumont Hotel in London’s Mayfair. Having grown up in Piedmont, surrounded by vineyards and working at his family’s restaurant, Scavarelli has been immersed in the world of wine from a young age. In the last year, he has overseen the wine provision at The Colony Grill Room during its 2021 relaunch, adding more premium and fine wines to its 180 bin cellar, with a focus on North American and Old World wines, with classic French and Italian wines to pair with a meat-focused menu

Which Champagne would You treat your parents or in-laws?

‘Considering that my parents-in-law are Taiwanese, I really would love to let them taste a grand classic, a complex Dom Ruinart Blanc de Blancs Magnum 2006. ‘Because of its blossom and pastry aromas together with a long finish of well-defined flavours of nashi pears, coconut, and hazelnut they will definitely be able to travel from east to west in the blink of an eye.’

Which Champagne would You treat your lover?

‘With my Lover? Well… she really loves unforgettable moments… so why not a unique Dom Pérignon Rosé 1995 Plenitude P2?’

Which Champagne would You treat your boss?

‘My boss loves Champagne very much. She is also my mentor, always incredibly balanced and able to express herself in a simple way even if the matter is very complex. So, the Champagne that might better mirroring her personality is Les 7 Extra Brut Laherte Frères.

Which Champagne would You treat yourself?

Even though my favourite traditional method is the 100 per cent Nebbiolo Travaglini Nebolè, mainly because it smells like home to me, I would treat myself with a French savoir faire called Champagne Moutard Père et fils Cuvée des 6 Cépages!

Which Champagne would You treat a dream guest, and why?

‘I’m not sure which is the favourite Champagne of Carletto Ancelotti … Carlo is simple, humble, and definitely a winner. The best coach ever, with an “AC Milan heart”, like myself.  I would love to let him choose a Champagne, I’m sure he would inspire me yet again. However, If he really wants me to pick the bubble, well, I would start with a hidden gem called Ca’ del Bosco Annamaria Clementi from Franciacorta, a region between his birthplace in Emilia-Romagna and mine in Piedmont. Not a Champagne, but definitely an excellent voyage of emotion to begin with.

Then, we should really go for a 2007 bubble to remember the last year AC Milan won the Champions league. A nectar able to recall that special moment, the final game. It must be an exciting bubble, intense, unique, something that unexpectedly wakes up after a long waiting time! Carlo, let’s get a Bollinger R.D. 2007!’ 

[ what piece of music would you listen to drinking wine with Your dream guest ?]

Well, it depends… if we are talking about football definitely the AC Milan anthem.  If not, Beethoven.
