Chateau During-Wendelius

Johan Mossö Wendelius & Johanna During

We are two champagne lovers living in Stockholm, Sweden. Wine and food is our common passion, and champagne has become the centre of that passion. We are constantly intrigued and amazed by the wide spectrum of styles and varieties that champagne has to offer. For us, one of the most exciting thing about champagne is the fact that it is a great choice to pair with all kinds of foods. You can follow our endeavour to explore and learn more about this noble beverage on our Instagram account.

Which Champagne would You treat your parents or in-laws?

‘Champagne drinking is quite contextual and because of the wide selection we always try to find something that fits the occasion. However, for our parents we would normally go for something elegant, crispy, acidity-driven and at the same time full-bodied and generous. It will have to be Charles Heidsieck Blanc de blancs.’

Which Champagne would You treat your lover?

‘We are both curious explorers when it comes to champagne. Johanna prefers fresh and lively champagne with a youthful bounce while Johan appreciates mature champagne with its velvety butteriness and ripe fruit. We often try to meet somewhere in between. Pol Roger Brut Reserve meets both our preferences. It is also the first champagne we ever had together and will therefore always have a special place in our hearts.’

Which Champagne would You treat your boss?

‘We would go for a grower champagne. Mostly because we believe that our bosses are not familiar with small-scale producers and it would be fun to introduce them to something new. Julien Prélat Les Vignes Basses is a Blanc de Noirs from 100% Pinot Meunier. That is something they probably haven’t tasted before.’

Which Champagne would You treat yourselves?

‘We have fallen head over heels in love with grower champagne. The craft behind the process from vines to bottle is so fascinating. At the top of our list is Bèrêche & Fils. They make such expressive and elegant wines which perfectly suit our palates. You can always find a selection of Bèrêche’s wines in our cellar. The Brut Reserve NV is probably the best entry level champagne we have ever tried.’

Which Champagne would You treat a dream guest, and why, and who’s is Your dream guest?

‘Anything Magnum! If we had our dream guest over we’d want to make sure the glasses are never empty. Dom Pérignon 2000 Magnum is one of the best champagnes we have ever tried. Unfortunately, we don’t have one lying around. However, it is our dream guest we are talking about; let’s dream a little!’

What piece of music would you listen to drinking wine in question 5 ?

‘Spotify’s playlist “Jazzy Dinner” always gets us in a champagne mood.’
