Per Dahlberg

Who am I, Per Dahlberg, me and my wife Sara ran our own restaurant Gastro for over 20 years. This summer I started working with my sister at our parental home Grand Hôtel in Mölle located in southern parts of Sweden. I´m pretty all-round, basically a chef but nowadays it`s in the dining room you come across me. Wine has always been an important part of my life.

Which Champagne would You treat your parents or in-laws?

‘I would treat my father-in-law who normally loves beer and snaps with a bottle of Charles Heidsieck ‘Brut Réserve’, a nice match to soused herring ( matjesill in Swedish).’

Which Champagne would You treat your lover?

I would treat my beloved wife with a bottle of ‘Comtes de Champagne’ from 1996, she really loves nicely aged Blanc de Blancs, and it also happens to be our wedding champagne.

Which Champagne would You treat your boss?

These days my sister Eva is my boss, she is tough but fair, I´m sure she would appreciate a nice bottle of ‘Cristal Rosé’, any vintage. ‘

Which Champagne would You treat yourself?

It´s a difficult question but I love everything I tasted from Selosse, why not a bottle of Substance?!’ 

Which Champagne would You treat a dream guest, and why?

‘Since I have Austrian roots a dream guest for me would be Manfred Krankl, I love his “interpretation” of Rhône wines. I hope he appreciates one of my favorites Krug 2000, which I would gladly serve as a thank for all exciting wine experiences.’
