The Chef and His Philosophy The kitchen is helmed by the talented Éric Canino, a virtuoso chef whose culinary identity has been deeply shaped by a fruitful collaboration with Michel Guérard, the renowned master of healthy cuisine. Drawing inspiration from this legacy, Canino composes a unique “Provençal score” that prioritizes the finest ingredients. His menu focuses heavily on fruit, vegetables, fish, and seafood, accompanied by some poultry, all enhanced by the liberal use of aromatic herbs and olive oil.

Culinary Mastery Canino’s culinary scope is described as phenomenal, bridging the gap between health-conscious preparation and deep, complex flavors. He employs a modern use of citrus fruits alongside textbook-perfect sauces and reductions that provide character and depth to every plate.

A dish emblematic of his style is the red mullet poached in seawater—one of the chef’s favorite cooking methods. This signature creation is paired with crushed tomatoes and citrus fruits, then escorted by a “superlative reduction of fish heads,” showcasing his ability to extract intense flavors from the sea.

A Sweet Conclusion The culinary journey at La Voile is completed by the work of consummate pastry chef Julien Coulomb. With experience from prestigious establishments such as Le Cinq and Plénitude (working with Maxime Frédéric), Coulomb signs creations marked by “delicate subtlety”. A prime example of his artistry is the strawberry and rhubarb delight, offering a refined finish to the meal.

Setting and Atmosphere Reflecting its high standing (€€€€), the restaurant offers a luxurious environment where guests can enjoy outdoor dining on the terrace.
