Champagne Vuillin The Knight Rose 88/12 Chd/PN, 30% Reserve. I have been following the development of this relatively new producer for a wee while so when a bottle arrived in the post I had to find a truly special occasion to crack it. Nothing can get more epic than an evening like this in the Highlands of Scotland after a similarly sensational day! The wine was built to commemorate Paul-Eroger Vuillin who's life's ambition was to produce a Champagne. Sadly he was called up to the Great War and never returned. But 100 years later Jean Paul, his Grandson, has started this venture to bring his granfathers vision to fruition. I must confess I entered with my preconception radar running wild. Some of these MA Champagnes can be a touch disappointing, spending more on labels and packaging than the juice inside. This Rose is made using a rather unique method of conferment Chardonnay and Pinot Noir and the latter undergoing cold skin maceration. The colour is a pleasant slightly bronzed, salmon pink. A pleasant buttery nose with oodles of redcurrant bite. Good lemon pith. Toasty. Crisp. Notes of lemongrass, starfruit. Really enjoy the toasty jammy note on the nose which shows a good level of maturity. Very delicate mousse with some bite that draws the saliva out and good length. I was hoping for a bit more spark on the finish but other than that it all seems there. Honeycomb, dark toast. Very creamy but with that comes a slight lack of direction and intention and you are left just a bit wanting… I have yet to try the full range but I must confess I was pleasantly surprised by the yummyness of this especially on the front end! Now, whether you feel it justifies the price is a whole other question. But I'll leave that to you to decide! #champagne #vuillin #champagnevuillin #theknight #invermark #celebratewiththeknight #rose #maceration #chardonnay #pinotnoir #latergram #instagramcatchup
