Champagne Hiking with Pommery

Les Crayères is one of the world’s foremost champagne oases. To me, the elegant castle and the divine Parc Pommery, designed by landscape architect Redon, make out the very heart of Champagne. Not by chance, this is where the most powerful men in the area decided to create a three-star Michelin restaurant. Gérard Boyer was given the honourable task and succeeded to the extent that both hotel and restaurant have been ranked as best in the world.

Today, the restaurant is managed superbly by France’s foremost young chef, Philippe Mille, in close competition with the god of food, Arnaud Lallement, and the L’Assiette Champenoise. They are each fantastic, making the decision of which one to choose a matter of taste, but visiting Champagne without dining at both restaurants is like leaving out the Colosseum when visiting the Roman Forum while in Rome. It is however not up for discussion that Philippe Jamesse, of Les Crayères, is the district’s leading sommelier. He has revolutionised glass design and made the wine world understand that champagne is a great wine, needing big glasses to breathe and release its wonderful bouquet. Despite the fact that his glass competes with my own Optimum, I tip my hat and congratulate this humble master sommelier on his well-deserved success. It was an honour and pleasure to share this grandiose Champagne Hiking with the estate’s champagne guru.
