Letter from a winemaker – Hatt et Söner

This morning we received a letter from François Vallois winemaker @ Hatt et Söner in Bergères-lés-Vertus. Read below his thoughts for the upcoming harvest of 2021 in champagne.

The Harvest is soon going to be in full swing in the Côte des Blancs.

2021 capricious weather will have a major impact on Champagne winegrowers. But once again, the Côte des Blancs vineyards remain privileged and will give us a beautiful harvest.

In the François Vallois HATT et SÖNER vineyards, it is with a lot of experience, wisdom, tenacity, and seriousness that we’re getting ready to harvest a fine vintage.

With late pruning to avoid spring frosts and assiduous monitoring for the observation of symptoms of vine diseases during the rainy periods of June and July, we will be proud to present beautiful bunches to you.

Few more days of patience, and thanks to September’s great sun, we will be able to cut the first bunches around September 17th, to complete the maturity of the bunches and obtain the optimum balance sought to develop the various 2021 vintages.

Since 2020, the production has committed to an environmental approach, rewarded by 2 certifications, Sustainable Vineyard in Champagne (VDC) and Highly Environmental Vineyard (HVE). To respect this new quality charter, I decided to travel 50 years back in time and use the methods practiced by my father and my grandfather. A new adventure is beginning, where better production is in focus and the perseverance of  this wonderful heritage, which is the vineyards of Champagne.
