Chef Mikael Einarsson is a gastronomical hero. You will find him as the gastronomical leader chef @ Björn Franzéns new stylish Brasserie Astoria in Stockholm. Here’s his take on a version of the classic tarte flambé !

This is how it goes when a Frenchman from Alsace tries to bake a pizza. Unlike what you would have done in Italy, you use crème fraiche instead of tomato sauce & you top with grated Gruyère & hot smoked pork loin. Highly recommended !

PRODUCE

  • 50gr yeast
  • 3.5 dl lukewarm water
  • 0.5 dl olive oil
  • 1 teaspoon salt
  • 8 dl wheat flour
  • 1 teaspoon sugar
