Which Champagne would You treat a dream guest, and why?
2002 Dom Pérignon « P2 ». It is the perfect example of a great vintage with a very precise blend. It perfectly illustrates the importance of aging, the capacity for extension and complexification. The character of this wine is one of the most fascinating that I have tasted lately.
