I am Nick Fisher aka Burgundynick and I have been reviewing wine on Instagram for over 3 years and performing wine tastings for over 10 years. From an early age I helped my father make homemade wine and over the years I have built up a love of all wines, especially, no surprises, Burgundy. I am studying my WSET Diploma to further my wine knowledge. As I have gotten older my appreciation and love of champagne has grown and my cellar, of 2,000 bottles, boasts over 100 bottles and there is always a bottle in the fridge, in case of emergencies.

Which Champagne would You treat your parents or in-laws?

I have just recently discovered the wonderful wines of Jacques Pougeoise and this wonderful NV Premier Cru Blanc de Blancs is perfect for my in-laws. They aren’t big Champagne fans but with its delicate citrus and light buttery brioche nose and a crisp, yet subtle, granny smith apple and citrus palate with a little sweet lemon and almonds finish who could not resist that?

Which Champagne would You treat your lover?

My wife and I were married in 2006 so the 2006 Thienot Champagne La Vigne aux Gamins is a perfect choice. It is starting to mature beautifully, like myself, with ripe fruits, a little mushroom and a complex, elegant and delicious finish.’

Which Champagne would You treat your boss?

I work for myself so I can treat myself with the 2010 Thienot Champagne Cuvée Garance Blanc de Rouges, I love Blanc de Noirs as the Pinot Noir gives lots of depth in the champagne with a pink grapefruit edge. This is just delicious and I could drink this everyday

Which Champagne would You treat yourself?

‘The 2013 Vilmart & Cie Champagne Premier Cru Grand Cellier d’Or is simply outstanding and Vilmart is often sited as a Champagne drinkers Champagne, with a touch of oak aging it adds so much complexity to the already superb fresh citrus, apples, buttery brioche, I could go on and on’.

Which Champagne would You treat a dream guest, and why? and who’s is Your dream guest?

‘My dream guest is the fantastic Oz Clarke, such an inspiration to me and many others with his enthusiasm and gusto for any wine, as long as it is tasty. So to honour him I would choose the 2009 Pol Roger Champagne Cuvée Sir Winston Churchill, with lots of Pinot it has plenty of red fruits in the mix but this is just sublime and will only get better.’

[ what piece of music would you listen to drinking wine with Your dream guest ?]

‘Oz likes some classical mustic and I just adore Beethoven’s Choral Symphony and we might get through a few bottles whilst listening to it.’
